It's finally happened.
We've become cradle robbers.
After the doc gave us a thumbs down to aged cheeses a few months back, as the mold is bad for our immune systems ,we've been satiating our curd laden dairy lusts with the "newborn" stuff.
That's farmers cheese, feta, mozzarella and most goat cheese in plain English.
Pretty much the blandest cheeses on Earth.You have to pair it with the right spices to make the flavors burst out.
Otherwise it just lies there on your tongue ,begging for an unremarkable q uick end down the old gullet .
I won't touch goat's cheese with ten foot pole, so that 's one less category * bleh*.
However being a food tinkerer ,I have managed to make several delectable dishes out of what we can eat.
A kick @ss cheesecake, potato chip dip and a salmon dill spread for crackers.
The only thing that hasn't worked yet is our family fave, mac & cheese.
I had gotten my from scratch version just right with the juxtaposition of creaminess , spice and perfect mouth feel over the past few years .
Maybe I can try it with this latest discovery, a shy sheeps young toscano fresco , if the melt is just right -- it could work...

a hundred years ago, my dad was doing some tree work at a man's home. he raised goats, where i was given a taste of goat cheese. i remember it being very peppered with crushed black pepper. i remember it being pretty tasty, but that could be because we weren't fed very well back then and i was hungry! go figure! xoxo

Embrace Goat Cheeses... they are wonderful. Feta, the king of goat cheeses (or, as my daughter used to call it, "stinky-feet cheese,") is just great in every form I've ever had it. Live wildly!
